Why A Blog?
I’ll admit it: I never thought I’d write a blog.
I’ve always felt like my writing was average at best, mostly just a means to an end. What could I possibly have to say that someone else would want to read?
But the last 18 months have changed my mind.
Starting Bubbala’s has been one of the most remarkable, exhausting, joyful, humbling, hilarious, and meaningful experiences of my life. And somewhere along the way, I realized: maybe this story is worth telling.
This blog won’t just be about the nuts and bolts of opening a neighborhood eatery (though there will plenty of that too). It will be about the love and grit that go into every bagel, brisket, kugel, and knish. And it will be the musings that go along with our day to day.
I hope you’ll hear from me often. And I expect that my daughter will hijack this blog from time to time with her own insights. She’s apt to pop in with her own stories about food, about life, and about what it’s like wrangling her parents, her kids, and a restaurant all at once. We are both constantly thinking about the food and the people and culture that inspire it all.
This blog will be about the recipes that have been passed down (and sometimes reinvented), the behind-the-scenes chaos, the unexpected lessons, and the beautiful mess that is Bubbala’s.
So, this is the start. A little preview into our world here at Bubbala’s. I hope you’ll join us on this adventure.
With love (and lox), Greg
